Taiwanese fried chicken is one of the most famous Taiwanese street foods and can be found in many Asian restaurants. However, it's always better to make your own food at home, use the ingredients you trust, flavor the food the way you like, and most importantlty, have fun with it!!

Instructions

    Cut the chicken into bite-sized pieces and place them in a container you'll use for marinating.

    Finely mince the garlic and add it to the chicken, along with the soy sauce, ground white pepper, sugar, egg, and cooking wine.

    Cover, place in the refrigerator, and let it marinate for at least 3 hours.

    Open a bottle of wine and enjoy it while you wait.

    Shake off any excess marinade, then coat each piece of chicken evenly with the tapioca starch. Let it rest for 5 minutes so the coating sticks to the chicken.

    First Fry: Heat the oil over medium low heat to 320°F (160°C). Fry the chicken until lightly golden, about 1 to 2 minutes, then remove it from the oil. Since the chicken is cut into small pieces, it cooks quickly, so be careful not to overcook it.

    Second Fry: Increase the oil temperature to 355°F (180°C), then return the chicken to the oil for 10 to 20 seconds to crisp it up. Transfer to a wire rack to drain any excess oil.
